Chiang Mai - Tastes of Thailand

I have of course talked on - and on and on - many occasions about the food of Thailand - and included many photos in each posts.

How then could I refuse the suggestion to go for a day Thai Cooking Course. So of we went - Myself, Seb & Ulli to the Siam Rice Thai Cookery School.

We were picked up from our hostel in the morning and first taken to market to see for ourselves the fresh ingredients we will be using. I have to say that it is the first time that I seen most of the Herbs & Spices that we use in their fresh state. For example, fresh Turmeric. Then to the school for cooking itself. I has to be said that normally that classes are for up to 10 people. As a result of the closure of Bangkok airport we were the only 3 at the class today. The teacher told us that this is the first class of foreigners in over a week. prior to this she was always full.

There was a choice of 3 menus. Normally we picked one and stuck to it. As we were only 3, we mixed up the 3 menus between us.

What did I cook then:

- Vegetable Spring Rolls
- Hot & Sour Chicken Soup
- Papaya Salad
- Fried Cashew Nuts with Chicken
- Made Red Curry Paste
- Red Curry with Chicken
- Banana in coconut milk.

The others cooked some of the following:


- Fried noodles Thai Style (Pad Thai) - a popular dish found everywhere in Thailand
- Chicken in coconut milk soup
- Spicy Glass noodles salad
- Sweet & Sour Stir fried with Chicken
- Green Curry with Chicken
- Sweet Sticky Rice with Mango.

Apart from the salads a great success. I, of course made my curry very mild. I found Thai curry sweeter than Indian ones. I think the use of Coconut helped.

A great day and we were also given - by email - the recipes we cooked that day. Claire if you want any I can forward you the recipes or anybody else who is interested.

A couple of time in the evening we went to a all you can eat Thai buffet. A great way o sample a mixture of Thai cooking. One of these time the tour operate we booked the cooking and the Day adventure trek - the next post - with joined us.

the cooking school sounds like a fantastic thing to do - would be great to get the recipes sometime.

I foolishly read this entry just before lunch and now my reheated plain pasta doesn't particularly appeal.
